It's nearly Christmas

Almost Christmas.  Nearly Christmas holiday.  I cannot wait.  Two weeks of no early morning school rush, no driving through traffic to get to work, two thirds of my kiddies off to kindergarten.  In short:  Bliss.  Pure bliss.




Our menu for this week doesn't include Xmas dinner.  As yet, I haven't got a cooking clue what we'll be cooking up...   


Menu for the week

Monday                         Risotto with Feta, Butternut & Bacon for the Carnivores
Tuesday                         Grilled Salmon with leftover risotto, haricots verts, and 
                                          gingered carrots
Wednesday                     Courgette & Mascarpone tart with vegetarian schnitzels
Thursday                          Homemade Tomato soup & bread
Friday                                Homemade pizzas
Saturday                           Spaghetti with tomato sauce & vegetarian meatballs
Sunday                             XMAS dinner.... still to be decided...

Menu for this week

Son#1 has declared that I'm allowed to make Bobotie ONE more time and then NEVER again.  I guess he's not a fan.  Won't include it in the weekly menu but rather spring it as a surprise on my poor 6-year-old honey when he least expects it (and because I really like it!).


More and more each day, I'm coming around to the idea of voluntary simplicity:  Choosing to live a simple life.  Not poor and poverty stricken, just simple.  Without all the stuff.



It's difficult.  Walking through supermarkets and turning away from the good stuff that is on display, but not on your shopping list.  Trying to keep myself convinced that I don't want that iPhone after all.  Just being happy with what one has.  My old phone still works.  No Apps possible but who cares.  Because that's it, really:  Stuff won't make me happy, but people will.  My people will.  My peeps rule.

And because my peeps rule, here is a menu for our week, without the dreaded Bobotie.

Monday                         Vegetarian Shepherd's Pie with roasted butternut
Tuesday                         Vegetarian 'meat' balls, broccoli, potatoes & cream sauce,
                                           Lingonberry jam
Wednesday                     Kale with mashed potatoes, smoked (vegetarian) sausage 
                                  (Dutch dish) with mustard & vinegar
Thursday                          Cauliflower soup & bread
Friday                                Vegetarian Schnitzels, baked potatoes, gingered carrots 
                                           & peas
Saturday                           Home alone again:  Homemade Pizza with the boys
Sunday                             Vegetarian lasagne

Rather late than never!

Amidst lots of stress, pain and a lack of sleep & rest this week, I still plan on eating relatively well and having the boys eat well too!

Menu for the week


Monday                         Convenience above all else:  Chips from the chip shop!

Tuesday                         Left-over chips, vegetarian meatballs, peas, Lingonberry jam
                                          & cream sauce

Wednesday                     Potato & leek soup, garlic bread

Thursday                          Bobotie & raisin rice

Friday                                Lentil & sweet potato soup, homemade bread

Saturday                           Sweet & sour stir-fry with tofu & rice

Sunday                             Homemade pizza!

The A-Team

Hannibal, the grey-haired leader of the A-Team, used to quip:  I love it when a plan comes together.  
Well, hell, so do I.
 

I have been making some plans of my own:

1.  Drug Son#1 who possibly has ADHD with some 'Focus' vitamins that I found on Amazon (will report back if he turns into a calm, mild-mannered little angel)

2.  Drug Son#2, who at 2 months shy of his fourth birthday, still can't manage to sleep through the night (meaning that WE don't sleep through either) with some melatonin drops that I ordered on Ebay all the way from Spain.  On this, I will also be reporting back...

3.  My Menu for the week, which you will find below...

and 

4.  Make time for myself this week, because I know that if I don't MAKE time, there won't ever BE time.


Sigh.  Onwards! Towards the end of this week (stare at my shorts, Mindfulness!!!)!!

Tuesday                          Leftover vegetarian Bobotie & raisin rice

Wednesday                      Salmon with a parmesan & lemon crust, gingered carrots, 
                                           peas & rice

Thursday                           Butternut, & pesto pasta with pine nuts, feta & bacon 
                                           for my husband

Friday                                 Cauliflower & Pesto soup, Ikea rye bread

Saturday                            Vegetarian pasta with tomato sauce & veg balls

Sunday                              Homemade pizza with veggies and salami for the Meat Eaters

Misty Monday Morning

As Oscar Wilde said:  If you want to be happy, be.  And it's exactly that attitude which I took with me when I left the house and ventured out into the mist this morning.  Happiness, is, in most cases, a choice.


Here goes my planning for the week:

Monday                          Left-over Vegetarian Shepherds pie & Brussel sprouts

Tuesday                         Courgette, mascarpone & parmesan tart

Wednesday                     Salmon with a parmesan & lemon crust, gingered carrots

Thursday                          Spiced honey Salmon with some kind of veg

Friday                               Vegetarian pasta with tomato sauce & veg balls

Saturday                          Some kind of soup

Sunday                            Veggie schnitzels, veg & potatoes (pretty boring!)


I also plan on being a good homemaker and cleaning at least 1 room thoroughly this week, studying a bit, working a bit more and hopefully relaxing a lot!
